Step 1

In a bowl, combine chicken strips with chili powder, paprika, cumin, salt, and pepper. Set aside for 10 minutes.

Step 2

In a large skillet or pot, heat 1 tbsp olive oil over medium-high heat. Add the chicken and cook until browned. Remove and set aside. In the same skillet, add the remaining olive oil. Sauté onions, garlic, and bell peppers until they are soft.

Step 3

Add the rice to the skillet with the vegetables, stirring to coat it with the flavors. Pour in the chicken broth and bring to a boil. Lower the heat, cover, and let simmer for about 15-18 minutes, or until the rice is cooked.

Step 4

Return the cooked chicken to the skillet, mixing it with the rice and vegetables. Garnish with fresh cilantro and serve with lime wedges.
