Nothing compares to quick and easy homemade subway cookies and we’ve got it all figured out. These little nuggets of chocolate are crispy, chewy and never fail to surprise your palette.

Step 1
In a medium sized bowl, add softened butter and granulated sugar. Mix untill pale and smooth.
Step 2
Add in light brown sugar and repeat the last step.
Step 3
Add in good quality vanilla extract and combine everything.
Step 4
To the same bowl, add a room temperatured medium sized egg and mix it really well.
Step 5
Add in all the dry ingredients, which includes plain flour, cocoa powder and baking soda. Mix this well and your cookie dough will reach a coarse consistency. Try not to overwork the mixture.
Step 6
Add the chopped chocolate chunks to the mixture and give it a final mix.
Step 7
Once the cookie dough is ready, let it rest in the refrigerator for 15-20 minutes.
Step 8
While the cookie dough is resting, pre heat your oven to 180 degree Celsius.
Step 9
Once rested, use a medium sized ice cream scoop to out even sized portions of cookie dough and place them on a baking sheet on your baking tray.
Step 10
Bake the cookies at 170°C for 12-15 mins and enjoy!
125g salted butter, softened
100g light brown sugar
75g granulated sugar
1 Tsp vanilla extract
1 medium egg
150g plain flour,
40g sifted 40g cocoa powder,
1/2 Tsp sifted 1/2 tsp baking soda
100g white chocolate, roughly chopped
200g milk chocolate, roughly chopped
