Step 1

In a large bowl, mix maida, salt, baking powder, baking soda, and ajwain. Add ghee (or oil) and rub it into the flour with your fingers until the mixture becomes crumbly. Gradually add water and knead into a firm dough. Cover the dough with a cloth and let it rest for 20-30 minutes.

Step 2

After resting, divide the dough into small portions. Roll out each portion into a thin sheet, about ½ cm thick. Using a knife or cookie cutter, cut the rolled dough into crescent shapes (resembling cashews or “kaju”).

Step 3

Heat oil in a deep pan over medium flame. Fry the shaped dough pieces in batches until they turn golden brown and crispy. Ensure the flame stays on medium to prevent them from burning. Once done, drain the fried namkeen on paper towels to remove excess oil.

Step 4

If you prefer a spicy coating, sprinkle the fried namkeen with chaat masala, red chili powder, and amchur while they are still warm.
