Step 1

Boil water with a pinch of salt, then add the vermicelli. Cook according to package instructions until al dente, then drain and rinse with cold water. Set aside.

In a small bowl, mix soy sauce, red chili sauce, and vinegar. Set aside.

Heat oil in a pan on medium heat. Add garlic and green chilies, stirring until the garlic turns golden. Add onions, bell pepper, carrots, and cabbage, and stir-fry for 2–3 minutes.

Step 4

Add the drained vermicelli to the pan. Pour in the prepared sauce, and season with salt and pepper. Toss well until vermicelli is evenly coated and heated through.

Step 5

Top with chopped spring onions and serve hot.
