Eggless Nutella Stuffed Red Velvet Cupcakes

Red velvet cupcake is a mix between the traditional red, red-brown, crimson, or scarlet-coloured chocolate cake and a cupcake which is a small cake designed to serve one person. The red velvet cakes are spongy small delights of crimson colour made of buttermilk, flour and cocoa powder.

Step 1

Firstly, we’ll make the buttermilk and set it aside. Combine 3/4 cup of milk with 1 tbsp of lemon juice or vinegar and mix it well. Set it aside to curdle.

Step 2

Combine 1/2 cup of powdered sugar and 1/4 cup of vegetable oil and whisk it till well combined. Add the vanilla essence and yoghurt and whisk again.

Step 3

Add the red food colour. You can add more than 1tbsp if you desire a more rich red colour in your cakes. Add your buttermilk to this mixture and whisk thoroughly.

Step 4

Place a sieve over your wet mixture and sift in the flour, cocoa powder and baking soda. Whisk everything until well combined. Do not overmix.

Step 5

Line your cupcake tray or tins with cupcake liners and fill 3/4th of the cup with the batter.

Step 6

Preheat your oven to 180°C or 356°F. Bake your cupcakes for 20 – 25 minutes. Insert a toothpick and check if your cakes are done. A clean toothpick indicates your cakes are ready to be taken out of the oven.

Step 7

Let them cool completely and enjoy with your favourite frosting and toppings or as is.
