Step 1

Grease a plate or tray with ghee and set aside.

Step 2

In a pan, combine sugar and water. Heat until the sugar dissolves completely. Cook until it reaches a one-string consistency.

In another heavy-bottomed pan, heat half of the ghee. Add the gram flour and roast on low heat until it turns golden and fragrant. Be careful not to burn it.

Slowly add the hot sugar syrup to the roasted besan, stirring continuously to avoid lumps.

Gradually add the remaining ghee while stirring. Keep cooking until the mixture thickens and begins to leave the sides of the pan.

Stir in the cardamom powder if using, and mix well.

Pour the mixture onto the greased plate and spread evenly. You can sprinkle cashews on top for garnish.

Step 8

Allow it to cool slightly, then cut into desired shapes while still warm.
