Step 1
Take a potato and peel it nicely from all sides and then put it under cold water and keep it for some time.
Step 2
Before cutting the potatoes wipe it with a cloth very nicely so that it dry down and after that first cut it from side to avoid the slipping and then cut the potatoes about 387 inches wide and then lay the pieces and cut it into strips about 387 inches wide again.
Step 3
Cut all the pieces in the same length so that while cooking it is all cooked at one time and very nicely.
Step 4
Put the potatoes in the cold water to prevent it from browning and also by doing this it removes all the excess starch and surface sugar. We can also store the chopped potatoes in the refrigerator for one day in advance.
Step 5
After that take a pan and add 4 cups of oil in it and we can also use deep fryer to fry the potatoes and heat the oil at medium to medium high flame.
Step 6
Before cooking the potatoes first dry the potatoes in a clean cloth so that it does not splutter over in the oil. Add potatoes in oil in small batches and cook them till they turn just soft.
Step 7
Slowly cook all the batches of the potatoes and then place it in a tray having tissue paper on it.
Step 8
Once all the potatoes are blanched place it nicely so that it does not stick to one another and then refrigerate it for one day before the final cooking of it.
Step 9
After that when all the potatoes are chilled heat up the oil again and fry it till crisp and golden brown.
Step 10
Add some salt and spices for your taste yummy, crispy, tasty fries are ready to eat. Serve it with tomato ketchup.
