Savory, hot meat or vegetable pies deeply satisfying and irresistible. Thenthuk in particular consists of hand-pulled noodles made with vegetables and meat. The flavor from the noodles leaches into an aromatic broth typically redolent of garlic, ginger, cilantro, and onions.

Step 1

In a mixing bowl take 2 cups refined flour. Add water slowly and knead a dough. Leave the dough to rest for 10-15 mins.

Step 2

Take Chicken mince in a bowl, add two teaspoons of ginger to it. Add one chopped onion to it and a cup of chopped coriander leaves.

Step 3

Season with salt as per taste, two tablespoons of soya sauce. Adding a pinch of Ajinomoto at this stage is optional. Mix all the ingredients well. Stuffing is ready,

Sprinkle some flour on a rolling board and roll the dough in the flour and gently knead it once again.

Step 5

Prepare small balls from the dough and roll them into small circular shapes. Shape all the balls similarly.

Step 6

Fill in the chicken stuffing in the center and close it like a semicircle, ensuring the edges are sealed well. Pinch the flat edges of the circle together firmly all the way around. Prepare all the Shapale similarly.

Step 7

Heat a cauldron and heat oil at medium flame and add the shapaley one by one into the hot oil.

Step 8

Let them cook in medium or low flame turning them at regular intervals. Deep fry them till golden brown. Remove and drain the excess oil.

Step 9

Shapaley is ready to serve with chutney of your choice.
